How do I store bread properly and use up stale loaves?

Split the loaf in two right away
Let a fresh loaf cool completely, then cut off the portion you will finish within 24-48 hours and set the rest aside. Packing warm bread traps steam, softens the crust and can start mould within a day. Do not leave the surplus whole: cut it into 1.5-2 cm slices.
Keep the daily portion in cloth or paper
Wrap the part you plan to eat in a cotton bread cloth or slip it into a paper bag, and leave it on the counter away from the stove and direct sun. Plastic bags hold moisture in and invite mould, while paper and cloth balance it so the crust stays crisp. Standing the loaf cut-side down on the board slows drying.
Slice the surplus and freeze it
Lay the slices in a single layer inside a zip-top freezer bag, press the air out by hand, seal it, write the date on the bag and put it in the freezer at -18 C. That way you pull out only the slices you need instead of the whole loaf. Quality holds for about a month and it stays usable for up to three.
Heat frozen slices without thawing
Do not leave frozen slices on the counter. Put them straight into the toaster or into a 180 C oven for 5-6 minutes. In an air fryer, 170 C for 3-4 minutes is enough. Waiting for them to thaw leaves the crumb gummy.
Revive one or two day old bread in the oven
Wet your hands and dampen the crust lightly, heat the oven to 200 C, set the loaf on a rack and bake for 8-10 minutes. The steam softens the starch inside again and the crust turns crisp. Eat it within 2-3 hours, and only do this once per loaf.
Dry older bread into breadcrumbs
Cut the bread into 2-3 cm cubes, spread them in a single layer on a tray and dry at 150 C for 20-25 minutes, stirring once halfway. Once cool, blitz for 30-40 seconds in a food processor and sift. In a sealed glass jar in a dry cupboard they keep for 2-3 months.
Turn the cubes into croutons and dinners
Toss dried cubes with 2 tablespoons olive oil, salt and oregano and bake at 180 C for 10 minutes for soup croutons. For Turkish papara, tear 4 stale slices into a bowl and pour over a cup of hot broth, yoghurt and buttery tomato paste. For meatballs, add 3 tablespoons breadcrumbs to 500 g of mince.
Throw mouldy bread out completely
If you see green, blue or fuzzy white spots, smell sourness or feel a sticky surface, bin the entire loaf. Mould threads spread invisibly through the crumb, so cutting off the spotted part and eating the rest is not safe. Wipe the bread bin with vinegar water and dry it.

Never cut the mouldy patch off bread and eat the rest. Mould fungi spread as invisible threads through the porous crumb and some species produce mycotoxins that survive heat, so baking will not make it safe. Do not feed mouldy bread to animals either; bag it and bin it.
