How do you ripen an avocado fast?

Check how ripe it is
Cradle the avocado in your palm and press gently with the fleshy part of your hand, not your fingertips. No give at all means 3-5 days to go; slight give means 1-2 days. Flick off the little stem cap with a nail: green underneath and you are on track, brown and you are too late.
Bag it with a banana
Place the avocado and one ripe banana (or a red apple or tomato) in a kraft paper bag and fold the opening over twice. The banana releases plenty of ethylene, and the paper holds the gas in while letting moisture escape. Skip plastic bags: they trap humidity and the avocado goes mouldy.
Store it warm and dark
Keep the bag somewhere between 20 and 25 °C, such as inside a kitchen cupboard or a countertop bread box. Stay at least a metre away from radiators, the stove and direct sun. Below 18 °C ripening slows noticeably, so a cold winter balcony or pantry is the wrong spot.
Check every 12 hours
Open the bag morning and evening and squeeze the fruit with your whole palm. It is ready when the skin gives slightly and a thumbprint holds for a second or two. Hass skin turns dark purple to nearly black, but Fuerte stays green, so judge by texture rather than colour.
Use the oven trick in a hurry
Heat the oven to 100 °C with top and bottom heat. Wrap the whole avocado tightly in aluminium foil, put it on a tray and bake 10-20 minutes depending on how hard it is. Rest it in the foil for 15 minutes, then chill it 10 minutes. It softens, but the flavour and fat stay behind real ripeness.
Move ripe fruit to the fridge
As soon as an avocado hits the texture you want, move it to the crisper drawer at 4 °C, where it holds for another 2-3 days. If you used half, leave the stone in the cut side, squeeze half a lemon over it, wrap tightly in cling film and finish it within 24 hours.

Oven and microwave methods do not ripen an avocado, they just collapse the cell walls: the taste is watery, sometimes slightly bitter, and the flesh never turns creamy. The most common mistake is leaving a hard avocado in a plastic bag, where trapped moisture creates soft brown rot and mould under the skin.
