Sort and untie the bunch
Take off the rubber band or tie, then pull out and discard every yellow or bruised leaf. Trim 1-2 cm off the root end, where the soil packs in tightest. A single spoiled leaf gives off enough moisture and ethylene to rot the whole bunch in 2 days.
Soak in vinegar water
Fill the bowl with 5 liters of cold water and stir in 1 tablespoon of vinegar or 1 teaspoon of baking soda. Push the greens all the way under, leave them 5 minutes, then swish them gently by hand. Soil and grit sink to the bottom while the vinegar cuts the bacteria load on the surface.
Rinse under running water

Open the container and touch the paper towel; if it feels damp, swap in a fresh one and pick out any yellowing leaves. With that check, parsley and arugula stay crisp for 7-10 days and a head of lettuce for 10-12 days.
